Ingredients
  

  • 1 ½ pounds Carrots 6-7 sliced and peeled
  • 1 tbsp Ginger Grated
  • 1 pcs Onion
  • 2 pcs Garlic cloves
  • 2 cup Vegetable broth
  • tsp Salt
  • tsp Pepper
  • 1 tbsp Butter
  • 2 cup Water
  • ¼ cup Sour cream or Coconut cream

Instructions
 

  • In a big pot, melt the butter and add onions and garlic cloves cook until soft, about 6 minutes.
  • Add broth, water and carrots and ginger, heat until boiling point, reduce the heat and let it cook until carrots are soft, about 30min.
  • Add sour cream or coconut cream and blend everything from the pot in a blender until smooth texture.
  • Put everything back to pot and add salt and pepper.
  • Serve immediately and add some sour cream or coconut cream for garnish!
