Dairy-free and vegan carrot ginger soup
Carrots are full of beta carotene, which is essential for your healthy pregnancy diet, and ginger that has been shown to help with nausea and inflammation. This soup is just one of the best choices.

carrot ginger soup
Ingredients
- 1 ½ pounds Carrots 6-7 sliced and peeled
- 1 tbsp Ginger Grated
- 1 pcs Onion
- 2 pcs Garlic cloves
- 2 cup Vegetable broth
- ⅓ tsp Salt
- ⅓ tsp Pepper
- 1 tbsp Butter
- 2 cup Water
- ¼ cup Sour cream or Coconut cream
Instructions
- In a big pot, melt the butter and add onions and garlic cloves cook until soft, about 6 minutes.
- Add broth, water and carrots and ginger, heat until boiling point, reduce the heat and let it cook until carrots are soft, about 30min.
- Add sour cream or coconut cream and blend everything from the pot in a blender until smooth texture.
- Put everything back to pot and add salt and pepper.
- Serve immediately and add some sour cream or coconut cream for garnish!
